A ginger shot asks something unusual of a juicer. Normally ginger goes through sandwiched between apple or carrot, which carries it into the auger and keeps it moving. A shot is mostly or entirely ginger, with nothing to help -- so the machine has to grip and crush a hard fibrous root on its own, and produce a usefully concentrated couple of ounces from it.

Why small capacity does not matter here

On every other page on this site a 24 oz catch cup is a real limitation, because you empty it mid-session. For shots it is completely irrelevant: you are producing two to four ounces. That means the cheapest small cold press machine is not handicapped for this job, which is unusual and worth knowing.

What does matter is whether the machine can handle pure hard fiber without stalling, and whether it has a reverse function when it does. Nutribullet's small, inexpensive machine states both 65 RPM and reverse, which makes it a genuinely sensible shot machine.

The technique that makes shots work

  1. 1.Cut ginger into thumbnail pieces. Larger pieces stall augers. There is no upside to feeding it whole.
  2. 2.Add one carrier item, even if you want it mostly pure. A small piece of apple or a length of carrot every few pieces of ginger keeps the auger gripping and pushes the ginger fiber through rather than letting it pack. The dilution is minor and the yield difference is not.
  3. 3.Lemon is the traditional second ingredient and it does the carrier job as well as the flavor job -- peel it first, because the pith is bitter and an auger will crush it straight into a very small volume of liquid.
  4. 4.Run the pulp through twice. With ginger this routinely produces a meaningful second pour, because the first pass is working against the hardest material in the kitchen.
  5. 5.Make several days at once. Shots are small enough that batching is practical. See how long fresh juice lasts for the storage picture.

What a centrifugal machine does with a ginger shot

Produces very little, loudly. Ginger's liquid is bound tightly inside dense fiber, and shredding followed by spinning does not crush it out -- it throws fragments at a basket where they sit, damp and aromatic. The smell of ginger coming off the pulp bin is the smell of the shot you did not get.

If a centrifugal machine is what you own, the honest alternative for shots is to grate the ginger finely and squeeze it through muslin by hand. It is tedious and it works considerably better than the machine will.
