Cucumber is one of the easiest things to juice and one of the most useful. It is almost entirely water in a soft structure, so every mechanism extracts it readily and yields generously -- and it is the best plunger in green juicing, which is arguably its more important role.

Cucumber as a plunger
This is the practical reason cucumber appears in almost every green juice recipe, and it is not about flavor. A length of cucumber fed after a bundle of kale or a handful of celery pushes the accumulated fiber through the auger and clears the screen as it goes.
It works better than apple for this because it is firm enough to push but wet enough to carry fiber along with it, and it adds volume without adding much sugar. If your green juice is clogging, adding cucumber between the difficult items is the first thing to try -- see juicer clogging fixes.
Why no machine struggles with it
Cucumber has very high water content and a soft structure with no long fiber to ride a basket and no density to resist an auger. Both mechanisms get at the liquid easily, and yield is generous relative to the volume of produce.
The only thing worth optimizing for is foam. A fast centrifugal machine will aerate a cucumber considerably, because there is nothing for the speed to work against. Use a low setting, or a slow juicer, and you get a cleaner result.

Peel or not?
A taste decision. The skin is where most of the bitterness lives, particularly on large waxed supermarket cucumbers, and it makes the juice greener and more vegetal. Small thin-skinned varieties are generally fine unpeeled.
If you are buying waxed cucumbers, peel them -- the wax is not something you want in a juice, and it does not wash off properly. Unwaxed or home-grown, a scrub is enough.

Technique
- Cut to length for your chute. Cucumbers are long, so diameter matters less than you would expect.
- Use a low speed on a centrifugal machine. There is nothing to cut through, so high speed only adds foam.
- Keep it as your plunger -- save a couple of lengths to feed last, after your greens, to push the remaining fiber through.
- Seeds are fine. Large seedy cucumbers produce slightly more watery juice; it makes no difference to the machine.
- Drink it soon. Cucumber juice separates quickly. Stirring fixes it.
Is it worth juicing on its own?
It is extremely mild, so most people use it as a base rather than drinking it neat -- with lemon, celery, greens, ginger or apple. As a base it is the most useful ingredient in green juicing because it contributes volume and liquid without dominating anything.
If you want cucumber alone and own a blender, blending and straining works nearly as well for a single glass, since you are not removing much fiber. Juicer vs blender covers when each makes sense.
