Ginger behaves like nothing else you will juice. It is small, extremely hard, intensely fibrous, and you only want a little of it -- which creates a specific problem: a small hard lump is the easiest thing in the world to stall an auger with, and the hardest thing to feed in a controlled way.

Why ginger is a cold press job

Ginger is dense fiber with the liquid bound tightly inside it. Releasing it takes sustained crushing pressure, which is what an auger applies. A centrifugal disc will shred ginger into fragments and throw them at the basket, where they are held but not squeezed -- so you get aroma and very little juice.

The practical test is the pulp: ginger pulp from a cold press machine comes out as a dry fibrous mat. From a centrifugal machine it comes out damp and smelling strongly of ginger, which is the smell of juice you did not get.

The feeding problem, and the fix

A small hard piece of ginger dropped into a vertical chute can sit on top of the auger rather than being drawn in, or wedge and stall the motor. Three things solve it:

  1. 1.Sandwich it. Feed ginger between softer produce -- apple, cucumber, carrot. The surrounding material carries it into the auger and gives the screw something to grip. This is the single most effective technique and it costs nothing.
  2. 2.Cut it small. Thumbnail-sized pieces rather than a whole knob. There is no benefit to feeding it whole and a real risk of stalling.
  3. 3.Use reverse if it jams. Nutribullet and AMZCHEF both state a reverse function. Without one, a stalled ginger knob means taking the drum apart.

Prep

You do not need to peel ginger for juicing. The skin is thin, it is not bitter, and a scrub under the tap removes anything you would want removed. If the root is old and the skin has gone papery and tough, trim those parts.

Do cut away any soft or moldy spots entirely rather than trimming around them. And be aware that ginger is potent enough that a small piece flavors a whole glass -- more is not better, and the quantity most recipes suggest is smaller than people expect.

If ginger shots are the goal

Then you have a different problem: you want a concentrated couple of ounces from almost nothing but ginger, with no softer produce to carry it through. What is the best juicer for ginger?
Omega's NC900HDC, because adjustable back-pressure and a horizontal auger you feed directly are both well suited to a small hard fibrous root. Any cold press machine will do far better than any centrifugal one.
Do I need to peel ginger before juicing?
No. The skin is thin and not bitter, so a scrub under the tap is enough. Trim any papery tough patches on an older root, and cut out soft or moldy spots entirely.
Why does ginger jam my juicer?
